Soy Ribboned Cucumbers
Ingredients
1/4 cucumber
50ml soy
50ml rice vinegar
Teaspoon chilli flakes
Juice of half a lime
Teaspoon sugar
Chopsticks for ribboning
Method
Place the cucumber lengthways and place a chopstick either side. With one hand steady the cucumber and chopsticks, then slice diagonally into the cucumber with a knife to create fine lines (the chopsticks will prevent the knife from going all the way through),
Flip the cucumber, then finely slice into it horizontally,
Once you pick it up it will have a nice accordion effect.
